4 Persian Cucumbers 1 tablespoon shio kombu (salted kombu kelp) 1 tablespoon sesame oil 1 tablespoon soy sauce 1 tablespoon rice vinegar 1/2 tablespoon sugar 1/2 tablespoon red chili flake (prefer Korean chili flake)
Direction:
1) Smash and slice cucumbers on the diagonal. 2) Prepare dressing by mixing sesame oil, rice vinegar, soy sauce, sugar, sesame seed and red chili flakes in a large bowl. 3) Toss shio kombu and cucumber to the dressing then serve.
